Knowing what I know now after using freeze dryers for my company, I can say buying a freeze dryer is a sound investment for anyone who commits to stocking up food over time.
(had to replace the whole galvanized T piece with new wires in it) Seems they are epoxied in there, and in my experience passthroughs are a problem spot, so it's not at all surprizing that there was a slight leak there. I've run the system in countless tests including over filling the pump and running the pump without a load (both result in lots of oil spitting out the exhaust port of the pump). I've drained the catch can twice, once with over 5 oz of oil in it, but have not collected any oil downstream in the jar so the system is performing well.
Freeze drying isn’t my only preservation method, but it’s my favorite. Keep the skills of canning, dehydrating, fermenting and more in your pocket so you have various ways of preserving food. They all have their pros and cons but non-e should be ignored.
So I corrected the oversight - I drilled and tapped the elbow to add the port. Here is a picture. It worked great today when I flushed the pump to clear out the gunk.

A funny lesson I learned is that we pelo longer freeze-dry many fruits or vegetables. I know this goes against what most preppers say but I’ve come to a different conclusion. We did tons of fruits and vegetables at first but considering the time it takes we found that we are better served by spending that precious freeze drying usage on more expensive items like meats, eggs, and complete meals.

You can choose to season meat either before or after the freeze drying process. I prefer to season cooked meats before processing and leave raw meat unseasoned. Then the Buy Now meat can be seasoned later before it’s cooked.
